The Best Apple Muffins Recipe

This time of year we are always trying to keep up with our apple tree. We have an apple tree in our yard that produces tons of apples each Fall. In an effort to use them in different and interesting ways, we have made Apple Cookies and Apple Crisp. Recently we used some backyard apples in this Apple Muffins Recipe. The only thing better than making yummy apple muffins is making them with some some little kitchen helpers.

This month, we are each sharing recipes using Apples or Pumpkins. Lots of good stuff here to try for Fall. Ingredients

  • 2 cups flour
  • 1/8 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • Dash of cinnamon
  • 1 extra large egg
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 stick of butter melted and cooled
  • 1 cup milk
  • 1 cup apples peeled and finely diced

Instructions

  1. Preheat the oven to 375 degrees.
  2. Pour the flour, baking powder, salt and a dash of cinnamon into a bowl and stir to combine.
  3. In another bowl, beat the egg and add the sugar, brown sugar and milk. Mix. Stir in the cooled, melted butter.
  4. Add the wet ingredients to the dry ingredients and mix to combine. Fold in 1 cup of peeled and chopped apples.
  5. Fill your muffin tin with cupcake liners or grease with cooking spray and fill each 3/4 full with the batter.
  6. Bake at 375 degrees for 20 minutes.
